Apple and Sweet Potato Pie

Lately we have been experimenting a lot with sweet potato. We had a couple ingredients around and wanted to give this one a try, so here it is!

Time including preparation and cooking: 45-60 minutes
Ingredients: not too many

2 small-medium apples
2 small-medium sweet potatoes
1 teaspoon cloves, ground
olive oil
dash of nutmeg
dash of cinnamon
1 teaspoon fresh ginger
handful of almonds


It was really easy to make and pretty filling for the belly 🙂 The pie can be eaten as a dessert or a side dish. We cooked the potatoes first in the oven. We found baking them versus boiling them retains much of the flavor so opted for baking. Although boiling them takes half the time. Afterward, we mashed them up in a bowl and then added the 2 sliced apples. We did not peel the apples, just washed and sliced.

Then we added ground cloves, a teaspoon of fresh ginger, a dash of nutmeg, and a dash of cinnamon. Of course more spices can be added to your preference. We added a thin coating of extra virgin olive oil to a cake pan just to make sure it wouldn’t stick.

Poor the sweet potato batter into the cake pan and smooth it out with a spoon or knife. Then add the almonds. Sprinkle a bit of nutmeg or cinnamon on top for added flavor.

Cooking time takes about 20-40 minutes, depending on your oven. It is cooked when the apples become soft and can easily be pierced with a fork.
